Dhokla Recipe | How to make Khaman Dhokla Recipe at home Dhokla recipe is a popular and traditional recipe made from fermented besan or chickpea flour batter. It is generally a Gujarati cuisine and is a combination of sweet and sour taste perfect to enjoy for breakfast or snack. These are steamed savoury chickpea flour cakes.

Ingredients for Dhokla Recipe:

For Batter

  • 3 tbsp Rava/ suji (fine)
  • 1 1/2 cup besan/ gram flour
  • 1/4 tbsp turmeric
  • 2 chilli
  • 1/2 tbsp ginger paste
  • 1 tbsp oil
  • 1/2 tbsp salt
  • 1 tbsp sugar
  • pinch hing
  • 1 tbsp lemon juice
  • 1 cup water
  • 1/2 tbsp Eno fruit salt

For Tempering

  • 1/2 tbsp mustard
  • 3 tbsp oil
  • 1/2 tbsp cumin (jeera)
  • 2 chilli
  • 1 tbsp sesame
  • pinch hing
  • few curry leaves
  • 1/4 tbsp salt
  • 1 tbsp sugar
  • 1/4 cup water
  • 1 tbsp lemon juice

For Garnishing

  • 2 tbsp Coriander
  • 2 tbsp coconut

Preparations:

  1. Take 1 1/2 cup besan and 3 tbsp rava in a large mixing bowl.

2. Add 1 tbsp lemon juice, 1/2 tbsp ginger paste, 1 tbsp sugar, 1/4 tbsp turmeric, pinch hing, 1 tbsp lemon juice, 1 tbsp oil and 1 /2 tbsp salt and then add 1 cup water or as required to prepare a batter.

3. Whisk the batter for 5 minutes or more until it turns smooth silky and then rest it for 20 minutes to allow besan to absorb water.

4. After 20 minutes, whisk it for 2 more minutes and then add 1/2 tbsp of eno fruit salt or we can use baking soda. Now mix it gently until the batter turns frothy.

5. Now transfer it to a greased container and immediately steam the dhokla batter for 20 minutes on medium flame or till it gets cooked completely.

6. Now cool the dhokla for 5 minutes and then unmold it and further cut them in desired shape.

7.Prepare the tempering by heating 3 tbsp oil, 1/2 tbsp jeera, 1 tbsp sesame seeds, 1/2 tbsp mustard, a pinch of hing, 2 green chillies and a few curry leaves and leave it to splutter.

8. Now add 1/4 cup water, 1/4 tbsp salt and 1 tbsp sugar and the mix and boil the water well and finally add 1 tbsp lemon juice.

9. Pour tempering over dhokla.

10. Garnish the dhokla with 2 tbsp chopped coriander leaves and 2 tbsp fresh grated coconut.

11. Now our Khaman dhokla is ready and we can serve it with green chutney and tamarind chutney.
